Our Gardens Our steps for planting: (1) Germination in rock wool blocks. The Greenhouse, designed by Architect Daubon, is quite unusual and unorthodox. It follows the architecture of the Villas on the property. It consists of 4" pipes covering the length of the greenhouse walls. Javier, our technician, has set up an intricate system of irrigation which allows the plants to receive the water and nutrients consistently throughout the day. The balance of plant food is crucial to the survival of the plants and also to their fruiting stage. We are growing the majority of the fresh fruits, vegetables, edible flowers and herbs used in our Restaurant. Hydroponics is an excellent way to provide fresh and nourishing food here on our small island of Culebra. In addition to hydroponics grown plants we also have larger plants and trees such as bananas, native lime,eggplants, papaya and pigeon peas directly planted in the ground but again using a system of irrigation with nutrients.
